Garlic Butter Bangus
Garlic Butter Bangus features crisp milkfish belly glazed in a buttery calamansi sauce.

Ingredients for Garlic Butter Bangus
- 1 kg boneless bangus belly fillets
- 1 head garlic, minced
- 2 shallots, finely chopped
- 1/3 cup butter
- 2 tbsp oyster sauce
- 2 tbsp banana ketchup or tomato sauce
- 1 tbsp soy sauce
- 1 tbsp calamansi juice or lemon juice
- 1/2 tsp sugar, optional
- Salt, to taste
- Freshly ground black pepper, to taste
- Sliced red chillies, for garnish
- Crispy fried garlic, for garnish
- Cooking oil
How to cook Garlic Butter Bangus
- 1.Pat bangus dry and season with salt and pepper. Fry skin-side down in a little oil over medium heat for 4 minutes per side.
- 2.Remove fish when golden and crisp. Add 1 tablespoon oil and butter to the same pan.
- 3.Sauté minced garlic until lightly golden, then add shallots and cook until translucent.
- 4.Stir in oyster sauce, ketchup, soy sauce, calamansi juice, and optional sugar; simmer 3 minutes until slightly thickened.
- 5.Return bangus, spoon sauce over it, and simmer 2 to 3 minutes. Garnish with chillies and crispy garlic; serve with rice.
