Ube Biko
Ube Biko is a sticky purple rice cake finished with a rich custard topping and latik.

Ingredients for Ube Biko
- 2 cups white glutinous rice
- 2½ cups water
- 400 ml coconut milk
- 1¼ cups brown sugar
- ¼ teaspoon salt
- 2 teaspoons ube flavouring
- 4 egg yolks
- 400 ml condensed milk
- ¼ teaspoon vanilla extract
- Latik, for topping
How to cook Ube Biko
- 1.Rinse the glutinous rice until the water runs clear, drain, then cook in a rice cooker with water and ube flavouring.
- 2.Heat coconut milk, brown sugar, and salt over medium heat until simmering; fold in cooked rice and stir constantly for 15 minutes until very sticky.
- 3.Press the rice mixture evenly into a 9-by-13-inch baking pan.
- 4.Whisk condensed milk, egg yolks, and vanilla in a saucepan; cook over low heat, stirring continuously, for 10 minutes until thick.
- 5.Spread the custard over the rice. Bake at 180°C for 10–15 minutes until lightly golden.
- 6.Cool, scatter with latik, then cut into portions and serve.
