Chicken Adobo Fried Rice and Tortang Corned Beef
Chicken adobo fried rice topped with crisp-edged tortang corned beef makes a hearty leftover meal.

Ingredients for Chicken Adobo Fried Rice and Tortang Corned Beef
- 1 cup chicken adobo, shredded and chopped
- 4 cups leftover rice
- ½ tsp salt
- 4 cloves garlic, crushed
- 3 tbsp cooking oil
- 1½ cups sautéed corned beef
- 1 egg
- ⅛ tsp ground black pepper
- 4 tbsp cooking oil
How to cook Chicken Adobo Fried Rice and Tortang Corned Beef
- 1.Mix sautéed corned beef, egg, and pepper. Heat 4 tbsp oil and fry the mixture in four flattened portions, 1–2 minutes per side, until cooked.
- 2.Mix leftover rice with salt, gently separating the grains.
- 3.Heat 3 tbsp oil over medium heat and cook garlic until light brown.
- 4.Stir-fry chicken adobo for 1 minute, then add rice and toss for 3–5 minutes until hot.
- 5.Plate the fried rice, top with tortang corned beef, and serve with a preferred condiment.
