Pork Menudo with Ham
Pork Menudo with Ham is a compact, saucy version of the Filipino favorite with tomato sauce, raisins, potatoes, carrots, and bell peppers.

Ingredients for Pork Menudo with Ham
- 6 ounces pork, cut into small cubes
- 5 ounces ham, cubed
- 1 small potato, cubed
- 1 small carrot, cubed
- 1 small red bell pepper, chopped
- 1 small green bell pepper, chopped
- 1 ounce raisins
- 1 small onion, chopped
- 4 cloves garlic, crushed
- 1 can tomato sauce, 8 ounces
- 1 1/2 cups beef broth, or 1 1/2 cups water with 1 beef cube
- 3 tablespoons cooking oil
- Salt, to taste
- Ground black pepper, to taste
How to cook Pork Menudo with Ham
- 1.Heat the cooking oil in a pot over medium heat. Saute the garlic and onion until fragrant and the onion softens.
- 2.Add the pork cubes and cook, stirring occasionally, until the outside turns light brown.
- 3.Add the ham and cook for 2 minutes to lightly render and flavor the oil.
- 4.Pour in the tomato sauce and beef broth, stir, and bring to a boil.
- 5.Add the raisins, cover the pot, and cook over low to medium heat until the pork is tender.
- 6.Add the potato, carrot, and red and green bell peppers. Cook for 5 to 8 minutes, until the vegetables are tender but not falling apart.
- 7.Season with salt and ground black pepper, stir, and cook for 2 to 3 minutes more before serving with rice.
