Pinakbet with Squid in Coconut Milk (Pinakbet sa Gata)
Pinakbet sa Gata combines tender vegetables and squid in a savory coconut and bagoong sauce.

Ingredients for Pinakbet with Squid in Coconut Milk (Pinakbet sa Gata)
- 1/2 pound medium squid, cleaned
- 6 snake beans (sitaw), cut into 2-inch pieces
- 1/2 small butternut squash, cubed
- 6 to 8 okra
- 1 Chinese eggplant, sliced
- 1 small bitter melon, sliced
- 1 thumb-sized piece ginger, minced
- 2 cups coconut milk
- 1 medium onion, chopped
- 4 cloves garlic, crushed
- 1 1/2 tablespoons shrimp paste (bagoong)
- 1/4 teaspoon ground black pepper
- 3 tablespoons cooking oil
How to cook Pinakbet with Squid in Coconut Milk (Pinakbet sa Gata)
- 1.Heat oil in a pot over medium heat; sauté garlic, ginger, and onion until the onion softens.
- 2.Add squid and sauté for 2 minutes, then remove it and set aside.
- 3.Add squash and sauté for 3 minutes.
- 4.Pour in coconut milk, bring to a boil, cover, and simmer for 10 minutes.
- 5.Add okra, sitaw, bitter melon, and eggplant; stir and cook for 8 minutes.
- 6.Return squid to the pot with bagoong and pepper; cook 5 minutes, then serve.
