Mamon
Mamon is a light Filipino sponge cake finished with melted butter and grated cheddar.

Ingredients for Mamon
- 8 eggs, separated
- 1 1/4 cups sugar, divided
- 1/3 cup water
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 3/4 cups sifted flour
- 1/3 cup butter, melted, plus more for brushing
- 1/3 teaspoon orange extract
- 1/4 teaspoon lemon extract
- 1 teaspoon cream of tartar
- Grated cheddar cheese
How to cook Mamon
- 1.Beat egg yolks, 1/2 cup sugar, and water at high speed until well combined.
- 2.Beat in baking powder, salt, flour, melted butter, orange extract, and lemon extract on low speed; set aside.
- 3.Beat egg whites with cream of tartar at high speed, gradually adding remaining sugar until stiff peaks form.
- 4.Gently fold the yolk mixture into the egg whites without deflating the batter.
- 5.Fill lined muffin cups three-quarters full and bake at 180°C for 15 minutes, until springy and cooked through.
- 6.Brush warm mamon generously with melted butter and finish with grated cheddar.
