Binignit
Binignit is a creamy coconut dessert stew of root vegetables, fruit, landang, and bilo-bilo.

Ingredients for Binignit
- 1 cup landang (palm flour jelly balls)
- 1 cup glutinous rice flour
- 1 cup sweet potatoes, diced
- 1 cup taro, diced
- 1 cup saba bananas, sliced
- 1/2 cup jackfruit, cut into strips
- 1/2 cup cooked sago pearls
- 2 cups coconut milk
- 1 cup coconut cream
- 1/2 cup sugar, or to taste
- Water, as needed
How to cook Binignit
- 1.Rinse landang until the water runs clear, then boil in water, stirring occasionally, until softened.
- 2.Add sweet potatoes and taro with coconut milk; bring to a gentle simmer until tubers are tender.
- 3.Mix glutinous rice flour with enough water to form small bilo-bilo, then drop them into the simmering pot.
- 4.Add saba bananas and jackfruit; cook until the bananas soften.
- 5.Stir in coconut cream and sugar; simmer until thickened to your preferred consistency.
- 6.Fold in cooked sago just before serving.
