Crispy Dinakdakan
Crispy Dinakdakan pairs twice-fried pork with a creamy, sharp chile dressing.

Ingredients for Crispy Dinakdakan
- 500 g pork belly
- 500 g pork ears
- 2 white onions, halved
- 1 tbsp whole peppercorns
- 1 tbsp salt
- 6 bay leaves
- 8 cloves garlic, halved
- 6 cups water
- 3/4 cup mayonnaise
- 2 tbsp soy sauce
- Juice of 1 lemon
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 large red onion, sliced
- 2 stalks spring onions, sliced
- 6 bird's-eye chilies, sliced
- Salt, to taste
- Cooking oil, for deep-frying
How to cook Crispy Dinakdakan
- 1.Bring water to a boil with pork belly, pork ears, white onions, peppercorns, salt, bay leaves, and garlic; cover and simmer 60 minutes until tender.
- 2.Drain, salt the meat, and cool for a few hours or refrigerate uncovered overnight.
- 3.Heat oil to 180°C. Fry pork for 8 minutes, rest 10 minutes, then fry again 8 to 10 minutes until crisp.
- 4.Chop pork bite-size and toss with red onion, spring onions, and bird's-eye chilies.
- 5.Whisk mayonnaise, soy sauce, lemon juice, 1/2 teaspoon salt, and pepper until smooth; toss with pork and serve immediately.
