Chicken Igado
Chicken Igado is a tangy soy-vinegar sauté of tender chicken heart and liver.

Ingredients for Chicken Igado
- 1 lb chicken liver
- 1 lb chicken hearts, halved
- 1 cup green peas
- 1/2 cup julienned carrots
- 1 red bell pepper, cut into strips
- 4 dried bay leaves
- 1 onion, chopped
- 5 garlic cloves, crushed
- 4 tbsp soy sauce
- 5 tbsp vinegar
- 1 cup water
- 6 tbsp cooking oil
- Salt and ground black pepper, to taste
How to cook Chicken Igado
- 1.Pan-fry chicken liver in 3 tablespoons oil until its liquid evaporates and it turns light brown; avoid overfrying, then set aside.
- 2.Wipe out the pan, heat remaining oil, and sauté garlic until browning; add onion and soften.
- 3.Add chicken hearts and sauté for 2 minutes.
- 4.Add soy sauce and vinegar, cover, bring to a boil, and cook for 1 minute.
- 5.Add bay leaves and water; cover and simmer over low-medium heat for 35 minutes.
- 6.Return liver, cook 3 minutes, add vegetables for 2 minutes, then season and serve.
