Dinengdeng
Dinengdeng is a light vegetable soup enriched with bagoong monamon and fried fish.

Ingredients for Dinengdeng
- 1 cup bamboo shoots, sliced
- 1 cup saluyot (jute leaves)
- 1 pack spinach leaves or other leafy vegetables
- 1 bunch string beans, sliced
- 10 okra, halved
- 2 tablespoons bagoong monamon or ground anchovies in oil
- 1 red onion, chopped
- 4 garlic cloves, minced
- 2 cups rice wash
- Fried fish, for serving
- Fish sauce or sea salt, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Dinengdeng
- 1.Heat oil in a pot and sauté garlic and red onion until aromatic.
- 2.Dilute bagoong in rice wash, strain it into the pot, pressing to extract liquid, then bring to a boil.
- 3.Add bamboo shoots and simmer for 5 minutes.
- 4.Add okra and string beans; cook for 3 minutes. Add spinach and saluyot, season, and simmer 2 minutes.
- 5.Transfer vegetables and broth to bowls, top with fried fish, and serve.
