Ginisang Ampalaya with Shrimp
Ginisang ampalaya with shrimp balances tender bitter gourd with sweet shrimp and softly set egg.

Ingredients for Ginisang Ampalaya with Shrimp
- 1 ampalaya (bitter gourd), halved lengthwise, seeded, and thinly sliced
- Salt, plus 1 tablespoon for salting ampalaya
- 8 to 10 shrimp
- 2 eggs, beaten
- 1 tomato, cubed
- 1 onion, sliced
- 4 cloves garlic, crushed and chopped
- 3 tablespoons cooking oil
- Ground black pepper, to taste
How to cook Ginisang Ampalaya with Shrimp
- 1.Toss ampalaya with 1 tablespoon salt and rest 15 minutes. Rinse thoroughly and drain.
- 2.Heat oil in a pan over medium heat. Sauté garlic until light brown.
- 3.Add onion and tomato; cook until soft.
- 4.Add shrimp and cook 2 minutes.
- 5.Stir in ampalaya and cook 3 to 5 minutes. Season with salt and pepper.
- 6.Push ingredients aside, pour in beaten eggs, and scramble until set. Mix through and cook 1 minute before serving.
