Lomi
Lomi is a thick, soothing noodle soup with pork, prawns, squid balls, and ribbons of egg.

Ingredients for Lomi
- 500 g lomi or thick egg noodles
- 1 1/2 cups pork belly, cubed
- 10 squid balls, halved
- 12 medium prawns
- 1/4 head cabbage, shredded
- 1 large carrot, julienned
- 6 cups chicken stock
- 2 tbsp cornstarch
- 3 eggs, beaten
- 6 cloves garlic, minced
- 1 shallot, finely chopped
- Oil, for cooking
- Ground pepper, to taste
- Fish sauce, to taste
How to cook Lomi
- 1.Cook noodles according to package directions; drain, rinse, and set aside.
- 2.Fry pork belly in a little oil until golden; remove. Sauté garlic and shallot for 1 minute, then fry squid balls.
- 3.Add chicken stock and bring to a boil. Add prawns and pork; simmer 2 minutes.
- 4.Mix cornstarch with a little water, add to pot, and simmer 2 minutes until thickened.
- 5.Add noodles, carrot, and cabbage; bring back to a boil. Turn off heat, stir in eggs continuously, season with pepper and fish sauce, and serve.
