Healthy Chicken Menudo
A lighter, tomato-rich Chicken Menudo with tender chicken, vegetables, and hotdogs.

Ingredients for Healthy Chicken Menudo
- 2 lb boneless chicken thighs, diced
- 2 tbsp soy sauce
- 1 tbsp calamansi juice or lemon juice
- 3 tbsp cooking oil
- 1 medium potato, diced
- 1 medium carrot, diced
- 3 hotdogs, sliced diagonally
- 5 garlic cloves, minced
- 1 medium onion, chopped
- 3 tbsp tomato paste
- 1 cup water
- 2 dried bay leaves
- 1 tbsp liver spread
- 1 red bell pepper, sliced (optional)
- 1 green bell pepper, sliced (optional)
- 1 tsp sugar (optional)
- Salt and ground black pepper, to taste
How to cook Healthy Chicken Menudo
- 1.Marinate chicken with soy sauce and calamansi juice for 20–30 minutes.
- 2.Heat oil over medium heat; fry potato and carrot for 3–4 minutes until lightly browned. Remove, then brown hotdogs for 1–2 minutes; set aside.
- 3.In the same pan, sauté garlic until golden and onion until soft. Add chicken and cook 5–6 minutes until lightly browned.
- 4.Stir in tomato paste for 1–2 minutes. Add water and bay leaves; boil, cover, and simmer 15–18 minutes until chicken is tender.
- 5.Blend in liver spread, then return potato, carrot, and hotdogs. Simmer 7–8 minutes until vegetables are tender.
- 6.Add bell peppers and cook 2–3 minutes. Adjust with optional sugar, salt, and pepper; serve hot with rice.
