Baked Macaroni
Baked Macaroni layers pasta, a hearty Filipino-style meat sauce, creamy béchamel, and melted mozzarella.

Ingredients for Baked Macaroni
- 400 g macaroni
- 400 g minced beef
- 400 g minced pork
- 2 cans (400 g each) Italian-style chopped tomatoes
- 1/2 cup beef stock
- 1 large white onion, chopped
- 6 garlic cloves, minced
- 3 tablespoons tomato paste
- 1 handful basil, chopped
- 1 teaspoon dried oregano
- 2 tablespoons sugar
- 2 tablespoons red wine vinegar
- 1/2 teaspoon cayenne pepper
- Olive oil
- Salt and freshly ground black pepper, to taste
- Mozzarella cheese, to taste
- 3 tablespoons butter
- 4 tablespoons plain flour
- 600 ml milk
- 1/2 teaspoon nutmeg
How to cook Baked Macaroni
- 1.Melt butter in a saucepan, stir in flour, then gradually whisk in milk; season with nutmeg, salt, and pepper and cook until smooth and thick.
- 2.Cook macaroni according to package directions; drain and set aside.
- 3.Heat olive oil in a pan; sauté garlic and onion, then cook beef and pork until lightly browned.
- 4.Stir in tomatoes, stock, tomato paste, vinegar, sugar, basil, oregano, and cayenne; simmer 20 minutes, then season with salt and pepper.
- 5.Mix macaroni with meat sauce in a baking dish; spread béchamel over it and top with mozzarella.
- 6.Bake at 180°C for 20 minutes, then at 220°C for 7–10 minutes until bubbly and partly golden; cool briefly before serving.
