Liver Steak
Liver Steak pairs quickly fried liver with a bright lemon-soy onion gravy.

Ingredients for Liver Steak
- 700 g pork or beef liver, thinly sliced
- 2 large white onions, sliced into rings
- 3 large lemons
- 1 cup soy sauce, divided
- 1 tablespoon cornstarch
- 1 cup beef stock
- Freshly ground black pepper, to taste
- Salt, to taste
- Cooking oil, for frying
How to cook Liver Steak
- 1.Marinate liver in 1/2 cup soy sauce, juice of 2 lemons, salt, and pepper for 3 hours.
- 2.Drain thoroughly and bring liver to room temperature; pat dry if needed.
- 3.Pan-fry liver in hot oil for 3 minutes per side, until cooked through. Set aside.
- 4.In the same pan, sauté onion rings briefly, keeping them slightly crisp.
- 5.Whisk cornstarch with beef stock and remaining soy sauce. Add to the pan and boil until lightly thickened.
- 6.Stir in juice of the remaining lemon, salt, and pepper. Pour sauce and onions over liver.
