Hopia Ube Dice
Pan-cooked Hopia Ube Dice have flaky pastry wrapped around a soft ube jam center.

Ingredients for Hopia Ube Dice
- 3/4 cup butter, cubed
- 1 3/4 cups all-purpose flour
- 2 tablespoons sugar
- 1/4 cup ice-cold water
- 1/2 teaspoon salt
- 1 egg, beaten
- Ube jam
- Butter, for the pan
How to cook Hopia Ube Dice
- 1.Pulse flour, sugar, butter, and salt in a food processor until pea-sized. Pulse in egg just until clumpy.
- 2.On a floured surface, press dough together, adding ice water 2 tablespoons at a time. Rest 5 minutes.
- 3.Roll and fold dough three times, then shape into a long log.
- 4.Flatten small dough portions, fill each with 1 tablespoon ube jam, then seal into compact parcels.
- 5.Cook in a nonstick pan over medium-low heat, gently pressing into dice shapes, for 2 minutes per side until light brown.
- 6.Add butter and cook each side 1 minute more, basting with melted butter.
