Sinuteng Baby Squid
Quick-cooking squid with calamansi, garlic, and gentle heat.

Ingredients for Sinuteng Baby Squid
- 600 g baby squid, gutted and cleaned
- 4 tbsp calamansi or lemon juice
- 2 tbsp soy sauce
- 2 bay leaves
- 6 cloves garlic, pounded
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Extra-virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 2 tbsp toasted garlic, for garnish
How to cook Sinuteng Baby Squid
- 1.In a pan over low heat, add olive oil and sauté the pounded garlic until light brown and fragrant.
- 2.Increase to medium heat. Add the squid, bay leaves, paprika, and cayenne, then cook for 3 minutes, turning once.
- 3.Season with salt, soy sauce, and pepper; cook only until the squid is opaque and just done.
- 4.Stir in the calamansi juice 1 tablespoon at a time, until the desired tartness is reached.
- 5.Turn off the heat, transfer to a plate, and sprinkle with toasted garlic.
