Ube Pandesal

Ube Pandesal makes soft purple bread rolls with a lightly crisp breadcrumb coating.

Ingredients for Ube Pandesal

  • 3 1/2 cups high-grade flour, plus more for dusting
  • 1/2 tightly packed cup mashed steamed ube
  • 75 g butter, softened
  • 1 cup full-cream milk
  • 1/4 cup warm water
  • 1/2 cup white sugar
  • 1 tsp salt
  • 1 egg, at room temperature
  • 3 tsp yeast
  • Breadcrumbs
  • Several drops ube flavocol, adjusted to desired color

How to cook Ube Pandesal

  1. 1.Dissolve yeast in warm water and set aside until bubbly. Mix in milk, egg, sugar, softened butter, and ube flavocol.
  2. 2.Combine flour and salt on a work surface. Make a well, add the yeast mixture and mashed ube, and mix into a dough.
  3. 3.Knead for 15 minutes until soft and clay-like, dusting lightly with flour only as needed. Cover and let rise warmly for 1 hour.
  4. 4.Deflate dough, divide into 1-inch-thick rolls, cut into 1 1/2-inch pieces, shape into buns, and arrange on a parchment-lined baking sheet.
  5. 5.Let buns rise in a warm place for 1 hour. Top with breadcrumbs and bake at 200°C for 12 to 15 minutes until golden brown.
