Pata and Beans
Pata and Beans is a slow-simmered pork hock and navy bean stew with a sweet, tangy tomato sauce.

Ingredients for Pata and Beans
- 500 g white or navy beans, soaked overnight
- 1 kg pork hock (pata), cut into sections
- 1/2 cup tomato ketchup
- 1/2 cup tomato paste
- 400 ml canned tomato puree
- 4 cups beef stock
- 1 cup brown sugar
- 2 tbsp apple cider vinegar
- 2 tsp dry mustard
- 1/2 tsp ground black pepper
- 1/4 tsp ground cinnamon
- 1 large onion, chopped
- 4 cloves garlic, minced
- Oil
How to cook Pata and Beans
- 1.Heat oil in a pot and brown pork hock on all sides. Transfer to a plate.
- 2.Sauté garlic and onion in the same pot until fragrant.
- 3.Return pork hock and add drained beans, ketchup, tomato paste, tomato puree, beef stock, sugar, vinegar, mustard, pepper, and cinnamon.
- 4.Bring to a boil, then cover and simmer on low for about 2 hours until pork and beans are tender.
- 5.Check liquid occasionally and add water if needed. Serve when the sauce is thick and glossy.
