Chicken Sotanghon Soup with Patola is a clear, golden noodle soup with tender chicken and squash.

Ingredients for Chicken Sotanghon Soup with Patola
- 1 1/2 lbs chicken, cut into serving pieces
- 1 patola, peeled and sliced crosswise
- 5 oz sotanghon noodles
- 8 cloves garlic, chopped
- 1 onion, chopped
- 1 tbsp chicken powder
- 1 1/2 quarts water
- 3 tbsp annatto oil
- 1 tbsp roasted garlic, for topping
- 2 tbsp green onions, chopped
- Fish sauce, to taste
- Ground black pepper, to taste
How to cook Chicken Sotanghon Soup with Patola
- 1.Heat annatto oil in a pot over medium heat. Sauté garlic until lightly golden, then cook onion until soft.
- 2.Add chicken and stir until lightly browned on all sides.
- 3.Add water and chicken powder. Bring to a boil, skim foam, then simmer 20 minutes until chicken is tender.
- 4.Add sotanghon and cook about 3 minutes, stirring gently to prevent clumping.
- 5.Add patola and cook 2 minutes until tender. Season with fish sauce and pepper; garnish with roasted garlic and green onions.
