Sinigang na Lechon
Sinigang na Lechon turns leftover roast pork into a deeply savory tamarind soup.

Ingredients for Sinigang na Lechon
- 1 kg leftover lechon ribs and backbones, cut into serving pieces
- 1 large onion, quartered
- 2 medium tomatoes, quartered
- 4 red chillies, sliced
- 250 g fresh tamarind pulp or 44 g tamarind mix
- 4 taro (gabi), peeled and quartered
- 15 okra, trimmed
- Fish sauce (patis), to taste
- Salt and pepper, to taste
- 6 cups water
How to cook Sinigang na Lechon
- 1.If using fresh tamarind, boil it in 1 cup water until soft, mash it, and strain the juice.
- 2.Combine lechon, remaining water, onion, and tomatoes in a large pot. Bring to a boil, skim, then simmer 20 minutes.
- 3.Add gabi and red chillies. Simmer 15 minutes, until gabi is tender and broth lightly thickens.
- 4.Stir in tamarind extract or mix. Season with fish sauce, salt, and pepper.
- 5.Add okra and simmer 5 minutes. Serve hot.
