Pocherong Bisaya
A hearty Visayan beef soup layered with sweet corn, saba bananas, and tender vegetables.

Ingredients for Pocherong Bisaya
- 1.5 kg beef shanks, cut into sections
- 4 saba bananas, sliced
- 1 cup bamboo shoots
- 2 ears fresh sweet corn, each cut into 3 sections
- 2 bunches bok choy
- 1 cabbage, quartered
- 4 stalks lemongrass, white parts pounded
- 6 stalks spring onions, sliced
- 1 onion, quartered
- 1 piece ginger, peeled and thinly sliced
- 6 cloves garlic, minced
- Fish sauce, to taste
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Pocherong Bisaya
- 1.Boil the beef shanks in water for 15 minutes, then drain, rinse, and discard any scum.
- 2.Heat oil in a clean pot over medium heat; sauté garlic, ginger, and onion until fragrant.
- 3.Add beef, corn, bamboo shoots, lemongrass, salt, and enough water to cover. Boil, then simmer 1 1/2 hours until tender.
- 4.Add saba bananas and cook for 15 minutes. Add cabbage and cook for 5 minutes.
- 5.Add bok choy and spring onions; cook 5 minutes until vegetables are tender. Season with fish sauce and pepper.
