Chicken Binakol
Chicken Binakol is a light coconut-water chicken soup scented with ginger and lemongrass.

Ingredients for Chicken Binakol
- 800 g chicken thighs
- 6 cloves garlic, minced
- 1 large onion, chopped
- 1/2 thumb ginger, sliced
- 2 stalks lemongrass, white parts only
- 2 large young coconuts
- Sea salt or fish sauce, to taste
- Freshly ground black pepper, to taste
- 1 handful chili or capsicum leaves
- Oil, for cooking
How to cook Chicken Binakol
- 1.Season chicken with salt and pepper; collect coconut water and scrape the coconut meat from both coconuts.
- 2.Heat oil in a pot over medium-high heat; brown chicken on all sides, then transfer to a plate.
- 3.Sauté garlic, onion, and ginger in the same pot until fragrant.
- 4.Add coconut water, lemongrass, chicken, and firm coconut meat; boil, then simmer on low for 25 minutes until tender.
- 5.Add chili leaves and soft coconut meat, if using; simmer 2 minutes.
- 6.Season with salt or fish sauce and serve in bowls or coconut shells.
