Nilagang Pasko
Nilagang Pasko is a festive mixed-meat broth with corn, vegetables, Chinese ham, and chorizo.

Ingredients for Nilagang Pasko
- 700 grams pork leg (pata)
- 500 grams pork belly (liempo)
- 500 grams chicken thighs
- 300 grams Chinese ham (jinhua ham)
- 1 large chorizo, sliced
- 3 ears corn, each cut into 3 sections
- 1/2 small Chinese cabbage, sliced
- 4 stalks spring onions, chopped
- 3 carrots, sliced
- 1 tablespoon whole peppercorns
- 2 large white onions, quartered
- Fish sauce, to taste
- Water
How to cook Nilagang Pasko
- 1.Place pork leg, pork belly, chicken, Chinese ham, chorizo, peppercorns, and onions in a pot. Cover with water, boil, then simmer on low for 1 hour.
- 2.Remove chicken and set aside. Add corn and simmer on low for 25 minutes.
- 3.Add carrots and simmer 15 minutes.
- 4.Add Chinese cabbage and simmer 5 minutes.
- 5.Return chicken if desired, add spring onions, season with fish sauce, and simmer 2 minutes before serving.
