Adobong Dilaw
Adobong Dilaw is turmeric-bright chicken adobo with crisp potatoes and a tangy finish.

Ingredients for Adobong Dilaw
- 1 kg chicken legs and thighs
- 1 knob turmeric, sliced
- 3 medium Agria potatoes, quartered
- 1 whole garlic bulb, minced
- 1/2 cup Filipino-style cane vinegar
- 1 tablespoon sugar
- 1 tablespoon salt
- Oil
- 4 bay leaves
- 2 tablespoons whole peppercorns
- 1/2 cup water
How to cook Adobong Dilaw
- 1.Season chicken with salt. Deep-fry potatoes until golden, then set aside.
- 2.Sauté garlic in oil over low heat until golden; remove. Cook turmeric for 30 seconds, then brown chicken.
- 3.Add water, cane vinegar, peppercorns, bay leaves, and sugar. Boil, then simmer 25 minutes.
- 4.Drain chicken and sauce separately. Fry chicken over high heat until browned on the sides.
- 5.Return sauce and potatoes, adding vinegar or liquid if needed; simmer 5 minutes, adjust salt, and top with fried garlic.
