Linat-an
Linat-an is a clear pork-rib soup enriched with taro, greens, and fragrant lemongrass.

Ingredients for Linat-an
- 1 1/2 kg pork spare ribs
- 1 large taro root, cubed, or 8 Asian taro
- 1 bunch string beans, cut into 2-inch pieces
- 1 bunch kangkong
- 1 bunch spring onions, cut into 2-inch pieces
- 6 lemongrass stalks, white parts only
- 3 cups rice washing
- 3 cups pork stock
- 1 red bell pepper, sliced
- 2 medium onions, roughly chopped
- Salt
- Fish sauce
- Freshly ground black pepper
How to cook Linat-an
- 1.Cover ribs with boiling water and boil 5 minutes to release scum. Drain, rinse ribs with cold water, and rinse the pot.
- 2.Return ribs to the pot with lemongrass, onions, rice washing, pork stock, and salt. Add large taro, if using, plus water as needed.
- 3.Bring to a boil and simmer 50 minutes. Add Asian taro, if using, and simmer 10 minutes.
- 4.Add string beans and bell pepper; simmer 3–5 minutes. Add kangkong and spring onions; simmer 2 minutes.
- 5.Season with fish sauce and pepper, then serve.
