Crispy Tadyang ng Baka
Crispy Tadyang ng Baka combines tender braised beef riblets with a bright, spicy vinegar dip.

Ingredients for Crispy Tadyang ng Baka
- 1 kg beef spareribs, cut into riblets
- 1/2 cup soy sauce
- 1 whole garlic, crushed
- 2 star anise
- 3 bay leaves
- 2 tbsp sugar, divided
- 1 tsp peppercorns
- 3 cups water
- Cooking oil, for deep-frying
- 1 cup vinegar
- 3 bird's-eye chillies, chopped with seeds
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- Freshly ground black pepper
How to cook Crispy Tadyang ng Baka
- 1.Cover ribs with water, boil until scum rises, then drain and rinse the beef.
- 2.Return ribs to the pot with soy sauce, crushed garlic, star anise, bay leaves, 1 tablespoon sugar, peppercorns, and water.
- 3.Bring to a boil, then simmer for 2 hours until fork-tender; drain and cool.
- 4.Pat ribs dry, refrigerate on paper towels for at least 4 hours, then deep-fry in hot oil until crisp.
- 5.Drain on paper towels; mix vinegar, chillies, shallot, minced garlic, remaining sugar, and pepper, then serve alongside.
