Pork Kaldereta sa Gata
Pork Kaldereta sa Gata is a rich coconut-braised pork stew with tender vegetables.

Ingredients for Pork Kaldereta sa Gata
- 2 lb pork belly, cubed
- 4 tbsp liver spread
- 6 tomatoes, chopped
- 1 onion, chopped
- 5 cloves garlic, crushed
- 4 cups pork broth, divided
- 2 cups coconut milk
- 2 potatoes, cubed
- 2 carrots, cubed
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 Thai chili peppers, chopped
- 3 dried bay leaves
- 2 1/2 tbsp fish sauce
- 1/4 tsp crushed black pepper
- 3 tbsp cooking oil
How to cook Pork Kaldereta sa Gata
- 1.Heat oil over medium heat; sauté garlic until lightly golden, then cook onion until soft.
- 2.Brown pork belly, add tomatoes, and cook until the tomatoes break down.
- 3.Pour in 2 cups pork broth and bring to a boil. Add Thai chilies, liver spread, and bay leaves.
- 4.Stir in coconut milk, cover, and simmer on low-medium for 45–60 minutes, adding remaining broth as needed, until pork is tender.
- 5.Add carrots and potatoes; cook 7 minutes. Add bell peppers and cook 7–8 minutes.
- 6.Season with fish sauce and black pepper; simmer uncovered until the sauce thickens.
