Tinapa
This homemade tinapa uses a garlicky brine and gentle barbecue smoke for deeply savory mackerel.

Ingredients for Tinapa
- 1 kg mackerel, cleaned, scaled, and gutted
- 3 cups water
- 3/4 cup sea salt
- 1/4 cup brown sugar
- 1 whole garlic, minced
- 1 tbsp freshly ground black pepper
- 1 tbsp vinegar
- 3 handfuls wood chips, soaked in water
How to cook Tinapa
- 1.Combine water, sea salt, sugar, garlic, pepper, and vinegar in a large bowl. Submerge mackerel and refrigerate for at least 6 hours.
- 2.Drain fish for 1 hour, then pat dry thoroughly.
- 3.Put soaked wood chips in a roasting pan over a gas barbecue grill. Heat until they begin smoking.
- 4.Set a foil-lined rack above the chips and arrange fish in a single layer. Cover the grill and cook over medium heat.
- 5.When smoke stops, turn off the grill and leave fish covered for 10 minutes. Serve once the fish is cooked through and smoked.
