Papaitan

Papaitan is a deeply savory beef offal soup balanced by ginger, chilies, citrus, and bitter bile.

Ingredients for Papaitan

  • 1/2 pound ox tripe
  • 1/2 pound cow’s small intestine
  • 1/2 pound beef, thinly sliced and chopped
  • 1/2 pound cow’s heart
  • 2 tablespoons bile
  • 2 thumbs ginger, julienned
  • 1 onion, diced
  • 6 cloves garlic, crushed and chopped
  • 8 cups water, divided
  • 4 to 6 finger chilies
  • 2 1/2 tablespoons salt, divided
  • 1/2 tablespoon ground black pepper
  • 1 to 2 lemons, or 5 to 8 calamansi
  • 2 tablespoons cooking oil

How to cook Papaitan

  1. 1.Bring 4 cups water and 1 tablespoon salt to a boil; add tripe and small intestine, then simmer 35–50 minutes until tender.
  2. 2.Remove and slice the tripe and intestine; discard their cooking water.
  3. 3.Heat oil in a clean pot. Sauté garlic, onion, and ginger, then add beef, heart, tripe, and intestine; cook 3–4 minutes.
  4. 4.Add remaining salt and black pepper; stir for 1 minute. Add remaining water, boil, then simmer 40 minutes.
  5. 5.Stir in bile and simmer 5 minutes. Add finger chilies and lemon or calamansi juice; simmer 3 minutes and serve hot.
