Pancit Palabok
Pancit Palabok features rice noodles under a richly flavored crab, shrimp, and smoked-fish sauce.

Ingredients for Pancit Palabok
- 500 g thin rice noodles or bihon
- Water
- 150 g crab meat
- 150 g crab fat
- 150 g minced pork
- 1/2 cup smoked fish, flaked
- 1 tbsp annatto powder
- Fish sauce
- 3 tbsp cornstarch
- 3 cups water
- 4 cloves garlic, minced
- 1 red onion, minced
- Oil
- Shrimps, shell-on
- Pork crackling (chicharon), crushed
- Spring onions, chopped
- Hard-boiled eggs, sliced
- Fried garlic
- Lemon, sliced
How to cook Pancit Palabok
- 1.Cook noodles according to package directions; drain and set aside. Boil shrimps in 3 cups water, reserving broth and seafood.
- 2.Shell shrimp. Pound shells, strain with the reserved broth, then blend broth with crab meat, crab fat, annatto, and fish sauce.
- 3.Sauté garlic and onion in oil. Add pork for 3 minutes, then stir in crab mixture and smoked fish.
- 4.Whisk cornstarch with a little water; add to sauce. Boil and simmer until thickened, loosening with water if necessary.
- 5.Top noodles with sauce, shrimp, chicharon, spring onions, eggs, and fried garlic. Add lemon before serving.
