Crispy Kare-kare
Crispy pork shank with creamy peanut sauce and kare-kare vegetables.

Ingredients for Crispy Kare-kare
- 2 pork shanks, about 1 lb each
- 1 large onion, sliced
- 2-3 cloves garlic, crushed
- 1 tsp peppercorns
- 1 tbsp salt, or more to taste
- Water, enough to cover meat
- Oil, for deep-frying
- 4-5 tbsp vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup peanut sauce or unsweetened peanut butter
- 1/4 cup glutinous rice flour
- 2 cups pork broth
- 1 tsp annatto powder
- 1 eggplant, sliced
- 1 bundle string beans, cut into 3-inch lengths
How to cook Crispy Kare-kare
- 1.Boil the pork shanks with the sliced onion, crushed garlic, peppercorns, salt, and water for 1-2 hours until tender; strain and reserve the broth.
- 2.Dry the shanks and deep-fry in hot oil until the skin is blistered and crisp.
- 3.In 4-5 tablespoons oil, fry the eggplant until lightly browned and cook the string beans until tender-crisp; set aside.
- 4.Sauté the chopped onion and minced garlic until soft, then pour in the pork broth and annatto.
- 5.Stir in the peanut sauce and glutinous rice flour; simmer until the sauce is thick and smooth.
- 6.Serve the crispy shanks with the sauce, eggplant, string beans, and bagoong on the side.
