Filipino Cocido
Filipino Cocido is a hearty mixed-meat broth with chorizo, vegetables, chickpeas, and saba bananas.

Ingredients for Filipino Cocido
- 700 g whole pork bacon hock
- 700 g beef shanks
- 500 g pork ribs
- 2 chorizo, about 200 g
- 400 g canned chickpeas, drained
- 4 saba bananas, sliced
- 1/2 head cabbage
- 150 g green beans
- 2 onions, quartered
- 6 cloves garlic, minced
- 1 tsp peppercorns
- 8 cups water, plus more as needed
- Salt, to taste
- Oil
How to cook Filipino Cocido
- 1.Heat oil in a large soup pot and brown beef shanks, pork ribs, and pork hock; remove.
- 2.Sauté garlic and onions in the same pot, then add peppercorns and return the meats.
- 3.Add water to cover; boil, then simmer on low for 1 hour.
- 4.Add chorizo and simmer 1 hour longer, adding water if needed to keep meats covered.
- 5.Add saba and cook 15 minutes. Add chickpeas, cabbage, and green beans; cook 5 minutes.
- 6.Season with salt and black pepper, then serve the meats, vegetables, and broth together.
