Lechon Lomi
Lechon Lomi is a thick, comforting miki noodle soup that gives leftover roasted pork a second life.

Ingredients for Lechon Lomi
- 1/2 lb lechon, chopped
- 1 lb flat miki noodles
- 1 1/2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 beef cube or 3 tsp beef powder
- 1 egg, beaten
- 1 tsp minced garlic
- 1 medium yellow onion, minced
- 3 tbsp cornstarch mixed with 3 tbsp water
- 1/2 tsp ground black pepper
- 6 cups water
- 2 tbsp cooking oil
How to cook Lechon Lomi
- 1.Heat oil in a wide pot and sauté garlic and onion until aromatic.
- 2.Add lechon and beef cube or powder. Cook for 5 minutes, then add water and bring to a boil.
- 3.Lower heat and simmer 30 minutes. Stir in soy sauce and fish sauce.
- 4.Stir in the cornstarch slurry, then slowly add beaten egg while stirring continuously until incorporated.
- 5.Add miki noodles and black pepper. Cook over low-medium heat for 5–8 minutes, until noodles are tender and broth thick. Serve hot.
