Bibingka Muffins
Bibingka muffins bring the holiday rice-cake flavor into soft individual portions topped with cheese and salted duck egg.

Ingredients for Bibingka Muffins
- 2 cups Mochiko sweet rice flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 5 eggs
- 1 1/2 cups granulated white sugar
- 6 tablespoons margarine, melted, plus more for topping
- 2 cups coconut milk
- 1 teaspoon vanilla extract
- 1 salted duck egg, sliced
- 3/4 cup shredded cheddar cheese
How to cook Bibingka Muffins
- 1.Preheat oven to 375°F and line a muffin pan with paper cups.
- 2.Whisk sweet rice flour, baking powder, and salt in one bowl.
- 3.Beat eggs, gradually add sugar, then mix in vanilla, melted margarine, and coconut milk until smooth.
- 4.Stir wet mixture into the flour mixture until no dry pockets remain, then fill muffin cups.
- 5.Bake for 28 minutes, until set and lightly golden.
- 6.Brush tops with margarine, add cheese and salted egg, then bake 3 to 5 minutes more until toppings warm through.
- 7.Cool briefly before serving.
