Pata Hamonado
Pata Hamonado slowly braises pork leg in pineapple juice and soy sauce until tender and glossy.

Ingredients for Pata Hamonado
- 2 kg pork legs, whole or cut into sections
- 400 g pineapple chunks
- 1/2 cup soy sauce
- 3 cups pineapple juice
- 1 cup water, plus more if needed
- Fish sauce, to taste
- 2 tsp peppercorns
- 1 tbsp brown sugar, optional
- 1 whole garlic bulb, minced
- Oil
How to cook Pata Hamonado
- 1.Sauté garlic in oil until golden brown in a large pot.
- 2.Add pork leg and brown on all sides.
- 3.Add soy sauce, pineapple juice, water, fish sauce, peppercorns, and pineapple chunks, keeping the pork submerged with extra water if needed.
- 4.Bring to a boil, reduce to a slow simmer, and cook 2 hours until tender.
- 5.Raise heat to high, stir in optional brown sugar and pineapple chunks, then boil 15 minutes until the sauce reduces and thickens. Serve hot.
