Tinolang Isda
Tinolang Isda is a ginger-scented fish soup finished with bok choy and spring onions.

Ingredients for Tinolang Isda
- 1 kg fish, scaled, gutted, and cut into sections
- 5 cups seafood stock or water
- 2 bunches bok choy
- 3 spring onion stalks, chopped
- 1 thumb-sized piece ginger, thinly sliced
- 1 large red onion, chopped
- 6 garlic cloves, minced
- Oil, for cooking
- Fish sauce or sea salt, to taste
- Ground black pepper, to taste
How to cook Tinolang Isda
- 1.Season fish generously with salt and black pepper.
- 2.Heat oil in a pot and fry fish until browned on both sides; remove carefully.
- 3.Sauté garlic, onion, and ginger in the same pot until onion softens.
- 4.Return fish, add stock, bring to a boil, then simmer for 12 minutes.
- 5.Add bok choy and spring onions, cover, and simmer 3 minutes; season with fish sauce and pepper.
