Kulambo
Kulambo is a chewy coconut rice cake topped with fragrant latik on banana leaves.

Ingredients for Kulambo
- 1 3/4 cups glutinous rice flour
- 1 1/2 cups coconut milk
- 1/2 cup coconut cream
- 1 cup white sugar
- 1/2 teaspoon anise seeds or fennel seeds
- 3 tablespoons latik
- 2 tablespoons coconut oil
- Banana leaves, for lining
How to cook Kulambo
- 1.Mix glutinous rice flour, coconut milk, coconut cream, sugar, and anise or fennel seeds until smooth.
- 2.Cook in a nonstick pan over medium-low heat, stirring continuously, until the mixture becomes sticky.
- 3.Stir in coconut oil and continue cooking for about 15 minutes until a cohesive dough forms.
- 4.Line a 10-inch flat bowl or bilao with banana leaves and press in the rice cake evenly.
- 5.Top with latik, cool until set, and slice to serve.
