Bopis na Manok
A spicy, tangy Bopis na Manok with tender minced chicken offal and crisp vegetables.

Ingredients for Bopis na Manok
- 1 lb chicken gizzards, cleaned
- 1 lb chicken hearts, cleaned
- 2 medium carrots, minced
- 1 large daikon radish, shredded
- 3 medium red onions, minced
- 1 small red bell pepper, chopped
- 1/4 cup annatto seeds
- 1 medium ripe tomato, chopped
- 5 Thai chilies, chopped
- 1/2 cup white vinegar
- 2 thumbs ginger, minced
- 3 tbsp soy sauce
- 3 tbsp patis
- 5 cloves garlic, chopped
- 5 dried bay leaves
- 1 to 1 1/2 cups water
- 3 tbsp cooking oil
- Water, for boiling
How to cook Bopis na Manok
- 1.Pressure-cook gizzards in 6 cups water for 15 minutes after pressure is reached; drain and mince. Boil hearts for 15 minutes, then mince.
- 2.Warm oil over low heat with annatto seeds until red; strain the seeds. Heat the annatto oil in a pot.
- 3.Sauté onions, garlic, ginger, and tomato until soft. Add gizzards, cook 1 to 2 minutes, then add hearts and cook 2 minutes.
- 4.Add chilies, bay leaves, soy sauce, and water. Bring to a boil, cover, and simmer for 15 minutes.
- 5.Add vinegar and let it return to a boil before stirring; cook 5 minutes. Add carrots, daikon, and bell pepper; cook 3 minutes.
- 6.Season with patis and black pepper to taste, then serve hot.
