Chicharon Bituka
Chicharon Bituka is boiled, seasoned intestine fried until deeply crisp for a classic bar snack.

Ingredients for Chicharon Bituka
- 2 lb thoroughly cleaned pig or cow intestine
- 6 dried bay leaves
- 3 tablespoons salt, divided
- 1 tablespoon whole peppercorns
- 4 tablespoons vinegar
- 16 oz water
- 3 cups cooking oil
- Vinegar and chilli pepper dip, for serving
How to cook Chicharon Bituka
- 1.Bring water to a boil. Add 2 tablespoons salt and vinegar, boil 2 minutes, then add the cleaned intestine.
- 2.When the liquid returns to a boil, add bay leaves and peppercorns. Simmer 40 minutes, until the intestine is tender.
- 3.Drain well, cut into preferred lengths, and coat evenly with the remaining 1 tablespoon salt.
- 4.Heat oil for deep-frying. Fry intestine until crunchy, drain, and serve with vinegar and chilli dip.
