Lengua Con Setas
Lengua Con Setas is tender ox tongue in a glossy mushroom sauce with savory pantry seasonings.

Ingredients for Lengua Con Setas
- 1 1/2 lb ox tongue, cleaned
- 2 cups crimini mushrooms, chopped
- 1 large yellow onion, chopped
- 2 tsp minced garlic
- 4 tbsp Worcestershire sauce
- 2 tbsp oyster sauce
- 2 tbsp light soy sauce
- 3/4 cup water
- 1/2 tbsp dried parsley flakes
- 1 tsp granulated white sugar
- 1 tbsp cornstarch mixed with 2 tbsp cold water
- 3 tbsp cooking oil
- Salt and pepper, to taste
How to cook Lengua Con Setas
- 1.Boil ox tongue in about 1 quart water for 90 minutes, or until tender. Cool, remove the skin, and slice into serving pieces.
- 2.Heat oil over medium heat and sauté onion and garlic until soft. Add tongue and cook for 3 minutes.
- 3.Stir in oyster sauce, soy sauce, sugar, and Worcestershire sauce; simmer for 1 minute.
- 4.Add mushrooms and water. Bring to a boil, then simmer until the liquid reduces; season with salt and pepper.
- 5.Stir in cornstarch slurry and cook until thick. Transfer to a platter and sprinkle with parsley.
