Kakaibang Tokwat Baboy
Kakaibang Tokwat Baboy combines grilled pork belly and crisp tofu in a lively calamansi-soy-vinegar dressing.

Ingredients for Kakaibang Tokwat Baboy
- 2 lb pork belly
- 12 oz extra-firm tofu
- 3 calamansi
- 3/4 cup soy sauce, for marinade
- 1 red onion, sliced
- 6 chili peppers, chopped
- 1/4 cup soy sauce, for sauce
- 3/4 cup white vinegar
- 1/2 cup lemon-lime soda
- Ground black pepper, to taste
- Oil, for rubbing tofu
How to cook Kakaibang Tokwat Baboy
- 1.Steam pork belly for 45 minutes, then cool. Mix calamansi juice with 3/4 cup soy sauce and marinate pork in a resealable bag for 1 hour.
- 2.Cut tofu into smaller pieces, rub with oil, and air-fry at 400°F for 17 minutes. Cool and cut into cubes.
- 3.Grill marinated pork belly until fully cooked. Let cool slightly, then slice into serving pieces.
- 4.Combine red onion, chilies, 1/4 cup soy sauce, vinegar, lemon-lime soda, and black pepper in a large bowl.
- 5.Add tofu and grilled pork; toss gently until coated. Serve as an appetizer or main dish.
