Pata ala Lauya
Pata ala Lauya is a tangy pork-leg soup enriched with tender young jackfruit and batwan.

Ingredients for Pata ala Lauya
- 2 kilograms pork leg (pata), cut into sections
- 500 grams young jackfruit, cut into large chunks
- 1 tablespoon annatto powder
- 6 batwan, or sinigang mix
- 2 long green chilies
- 1 large white onion, quartered
- Water, enough to cover
- Salt, to taste
- Freshly ground black pepper, to taste
How to cook Pata ala Lauya
- 1.Place pata, onion, salt, and enough water to cover in a large pot; boil, then simmer 1 1/2 hours until tender.
- 2.Add young jackfruit and boil about 30 minutes, until tender.
- 3.Add batwan or sinigang mix and simmer until the broth reaches your preferred sourness.
- 4.Stir in annatto powder until evenly colored, then add green chilies.
- 5.Season with salt and black pepper, then serve hot with rice.
