Pancit Malabon
Pancit Malabon coats thick rice noodles in an intensely savory crab-and-seafood sauce.

Ingredients for Pancit Malabon
- 500 g thick rice noodles
- Water, as needed
- 150 g crab meat
- 150 g crab fat
- 1/2 cup flaked smoked fish
- 3 tablespoons annatto powder
- Fish sauce, to taste
- 3 tablespoons cornstarch
- 2 to 3 cups water
- 4 cloves garlic, minced
- 1 red onion, minced
- Oil, for cooking
- Shrimp, shell-on
- Squid, sliced into rings
- Mussels, shell-on
- Crushed chicharon
- Chopped spring onions
- Hard-boiled eggs, sliced
- Fried garlic
- Lemon, sliced
How to cook Pancit Malabon
- 1.Cook rice noodles according to package directions, drain, and set aside.
- 2.Boil shrimp, mussels, and squid in 2 cups water until cooked. Reserve the liquid; shell shrimp and mussels, and reserve seafood.
- 3.Pound shrimp shells, strain their juices with the seafood cooking liquid, then blend with crab meat, crab fat, annatto, and fish sauce.
- 4.Sauté garlic and onion in oil. Add the crab mixture and smoked fish.
- 5.Stir cornstarch with a little water, add to the pan, and simmer until thickened, thinning with water if needed.
- 6.Toss noodles with sauce. Top with seafood, chicharon, spring onions, eggs, fried garlic, and lemon.
