Law-Uy
Law-uy is a vegetable-rich soup with fried pork, taro, and saluyot.

Ingredients for Law-Uy
- 200 g fatty pork, cubed
- 4 medium Asian taro, cut into 1/2-inch sections
- 1/4 butternut squash, cubed
- 1 bunch saluyot
- 1 long patola or luffa, sliced
- 12 okra
- 2 eggplants, sliced
- 1 stalk lemongrass, pounded
- 1 red onion, sliced
- 1 thumb-size piece ginger, thinly sliced and pounded
- 4 cloves garlic, minced
- 5 cups water
- Salt, to taste
- Freshly ground black pepper, to taste
- Cooking oil
How to cook Law-Uy
- 1.Season the pork well with salt and pepper. Fry it in oil in a wok until golden, then remove it from the pan.
- 2.In the same wok, cook the garlic, onion, and ginger until fragrant.
- 3.Add the water, taro, and pounded lemongrass. Simmer for 10 minutes.
- 4.Add the eggplant, squash, okra, and fried pork, then continue simmering for 5 minutes.
- 5.Add the patola and cook for 2 minutes. Stir in the saluyot for the final minute, adjust the salt and pepper, and serve.
