Inutak
Inutak is a layered coconut and ube rice cake with a golden coconut-cream top.

Ingredients for Inutak
- 2 cups glutinous rice flour
- 1/4 cup purple yam powder
- 4 cups coconut milk
- 1/2 cup coconut cream
- 2/3 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla
- Purple food coloring
- Vanilla or ube ice cream, for serving
- Banana leaf
How to cook Inutak
- 1.Whisk glutinous rice flour, sugar, salt, vanilla, and coconut milk until lump-free; divide evenly between two bowls.
- 2.Mix purple yam powder and enough food coloring into one portion for a deep purple mixture.
- 3.Cook each mixture separately in nonstick pans over medium-low heat, stirring constantly until thick, smooth, and slightly oily.
- 4.Line a 7-inch baking pan with banana leaf. Press in the purple layer, then the white layer, smoothing each evenly.
- 5.Pour coconut cream over the top. Bake at 180°C for 15 minutes, then broil at 230°C until golden brown.
- 6.Cool before slicing and serve with vanilla or ube ice cream.
