Calderetang Baboy
This rich Calderetang Baboy cooks pork belly in a savory tomato and liver sauce.

Ingredients for Calderetang Baboy
- 2 lb pork belly, cubed
- 1 small red bell pepper, cut into small squares
- 1 small green bell pepper, cut into small squares
- 3 medium ripe tomatoes, cut into wedges
- 4 oz Filipino-style tomato sauce
- 3 oz liver spread
- 2 medium potatoes, diced
- 1 medium carrot, diced
- 1 medium yellow onion, diced
- 4 cloves garlic, crushed and chopped
- 3 to 4 cups water
- 6 tbsp cooking oil
- Salt and ground black pepper, to taste
How to cook Calderetang Baboy
- 1.Heat oil and pan-fry carrot and potato for 2 to 3 minutes, until lightly browned outside; set aside.
- 2.Pour off excess oil. Sauté onion, garlic, and tomatoes until soft.
- 3.Add pork belly and cook until lightly browned. Stir in tomato sauce and water.
- 4.Bring to a boil, cover, and simmer over low heat for 45 to 60 minutes, until pork is tender.
- 5.Stir in liver spread until smooth. Add bell peppers and cook over medium heat until sauce reduces by half.
- 6.Season with salt and pepper, fold in carrot and potato, and cook 3 to 4 minutes before serving.
