Sinigang na Pompano sa Miso
Sinigang na Pompano sa Miso balances tamarind tang, mellow miso, and tender fish.

Ingredients for Sinigang na Pompano sa Miso
- 2 whole pompano, about 500 to 600 g each, cleaned, scaled, and cut into serving portions
- 2 cups fresh tamarind pulp, from boiled and strained tamarind pods
- 8 cups water
- 2 tablespoons yellow miso paste
- 2 medium tomatoes, quartered
- 1 medium red onion, sliced
- 1 thumb-sized piece ginger, thinly sliced
- 1 daikon radish, peeled and cut into rounds
- 3 green chillies (siling pangsigang), left whole
- 1 bunch mustard leaves, washed and trimmed
- 2 tablespoons fish sauce (patis)
- Salt, to taste
How to cook Sinigang na Pompano sa Miso
- 1.Boil tamarind pods in 3 cups water until soft, mash them, then strain to make tamarind pulp.
- 2.Bring 8 cups water to a boil. Add onion, ginger, and tomatoes; simmer for 10 minutes.
- 3.Stir in tamarind pulp and miso until dissolved. Add daikon and simmer about 10 minutes until tender.
- 4.Gently add pompano and simmer for 8 to 10 minutes, until just cooked through.
- 5.Add mustard leaves and siling pangsigang for 2 to 3 minutes. Stir in patis, adjust salt, and serve.
