Adobong Puti
Adobong Puti lets vinegar, garlic, and peppercorns shine in a rich chicken adobo.

Ingredients for Adobong Puti
- 3 tbsp oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2-2 1/2 lb chicken, assorted cuts
- 3 tbsp fish sauce (optional)
- 1 tsp peppercorns, cracked
- 1 cup vinegar
- 1 head garlic, top trimmed
- 3 bay leaves
- Salt and pepper, to taste
How to cook Adobong Puti
- 1.Heat oil over medium heat. Sauté onion and minced garlic until soft and aromatic.
- 2.Add chicken, optional fish sauce, and peppercorns. Cover and cook, turning once or twice, until edges are lightly browned.
- 3.Lower heat; add bay leaves and whole garlic. Pour in vinegar and simmer uncovered without stirring for 5 minutes.
- 4.Cover and cook 20 to 25 minutes, until chicken is tender. Adjust seasoning with salt and pepper if needed.
- 5.Uncover and simmer over low heat 8 to 10 minutes, until reduced to a thick sauce. Serve with steamed rice.
