Beef Pochero
Beef Pochero is a comforting tomato-based stew with saba bananas, sweet potatoes, and greens.

Ingredients for Beef Pochero
- 1 kg stewing beef or 1 1/2 kg beef short ribs
- 2 chorizo, sliced
- 1 can (400 g) chickpeas, drained, or 1 can (400 g) baked beans in tomato sauce
- 2 medium sweet potatoes, cubed
- 4 saba bananas, sliced
- 2 bunches bok choy or Chinese cabbage
- 150 g French beans, optional
- 3 heaped tbsp tomato paste
- 1 onion, diced
- 6 cloves garlic, minced
- 1 litre beef stock
- Water
- 2 tbsp sugar
- Fish sauce
- Freshly ground black pepper
- Oil
How to cook Beef Pochero
- 1.Heat oil in a pot and sauté garlic and onion. Add chorizo and cook for 2 minutes.
- 2.Add beef and brown the sides. Pour in stock, add enough water to barely cover meat, bring to a boil, then simmer on low for 1 hour.
- 3.Add saba bananas, tomato paste, and sugar; simmer 15 minutes. Add sweet potatoes and simmer 10 minutes.
- 4.If using French beans, add them and simmer 5 minutes.
- 5.Season with fish sauce and pepper. Stir in chickpeas or baked beans and bok choy, turn off heat, cover 5 minutes, and serve with rice.
